Biscuit has variation in meaning in the U.S. it is a cookie and soft whereas British biscuits and in some other countries are crunchy and dries. The world biscuit came from the old French word “bescuit” which is further originated from the Latin word “bis” i.e. twice and “coquere” to cook so simply the one which is cooked twice. The process varies with geographic differences. The word was then taken by English in the 14th century. Though the biscuit did not start in India but still India we are not that behind for amaze India is the world’s 3rd largest biscuit manufacturer after the United States and China. Being the biscuit market a century old the industry able to produce it on a wide basis only in the latter part of the 20th century. Since then the market evolved day and night and whatnot has experimented. With increasing health issues like diabetes, obesity, and other problems, the companies started valuing this item on the variety of sugar used. With greater advancement and better facilities, numerous studies were done to study the effect of sugar and carbohydrates on human health. Many alternatives have been looked after for sugar and then the fiber as an extra ingredient before it gets baked. In India biscuit as a snack is highly adored by every age group prior they were considered as a healthy diet as they are mobile, cholesterol-free, affordable at a cost. Maharashtra, Andhra Pradesh, Karnataka, and Uttar Pradesh are states which are top in the list of highest consumption. The biscuit industry, the largest food industry in India with a yearly yield of around Rs 3000 crores including both the organized and unorganized sector and unorganized sector covers enough production part. The industry has a wide opportunity for growth and quite good potential to contribute to the economy of India as our average consumption in India per person is below 2.1 Kg. The market size is growing continuously.
